Replicating observations is not easy. Aki has recently been boiling peeled potatoes before roasting them under a chicken. One evening, the potatoes developed a ravioli-like skin around them, allowing the center to be soft and creamy. These potatoes were outstanding. The memory of them has been haunting me. The idea of a potato ravioli in its own skin fascinated me. Yesterday, we boiled small potatoes in their skins. Then we peeled them and put them in the dehydrator for a few hours. The potatoes developed a skin, and the insides stayed soft. We crushed a number of them straight from the dehydrator. Restraint saved a few for further explorations.
