It’s exciting when you can add flavor to an ingredient that has been a part of our pantry, hidden in plain sight, waiting to be played with. Today we took some standard dill pickles and their brine and put them into a shallow pan to smoke. We used our smoking tube and some apple wood pellets. The flavor of the smoke adds a richness to the bright, snappy pickles. The smoked brine is flavor-packed and as much an ingredient as the pickles themselves.
