A few weeks ago we were at the Arcobaleno factory. I had the opportunity to run a batch of noodles with a new shape, honeycomb. The noodle has ridges and pockets. It is sturdy and beautiful. With the shape in hand, it becomes time to work on sauces to complement it. I’m sure at least a few variations will feature honey to play off the shape.
