The cake base is flavored with freeze-dried peaches. The filling is a meringue flavored with freeze-dried raspberries. In the very center of the “pies” is a piece of crème fraîche caramel. The Melbas are dusted with a seasoning blend of powdered sugar and freeze-dried peaches. These small bites borrow the best from the originals.
