Here is a violet yogurt crepe stuffed with whipped mango created in our class this afternoon. We revisited two methocel preparations: whipped and griddled, using F50 and A15C respectively. The result looks like an egg white omelet and tastes like an Indian Lassi served hot. The outcome: smiles and the nerd factor of the day award.
