We were able to transform meatloaf into meatballs by dicing the meatloaf and simmering it in a quick tomato sauce. The simplicity of the solution has me thinking about what other meatloaves we should be making, what kind of meatballs they would make, and what kind of sauces we should work on. I wonder why we haven’t sliced meatloaf into slices and simmered them in sauce for a much more functional meatball sandwich? I know it’s definitely going to happen with the next one.
