We added jalapenos to the griddled jalapeno kielbasa at the last minute in order to incorporate the flavor of fresh, lightly cooked peppers. Too often, we add aromatics in the beginning of a longer process when we cook fish and meat, overlooking the ability to integrate flavors into quick cooking methods. The griddle is a great opportunity to integrate a final hit of flavor at the very end of cooking, in the same way that we baste with butter and herbs to add flavor after pan roasting. This has me looking more closely at what we are cooking, how we are cooking it, and the final ingredients we can add to amplify flavors and textures in the finished dish.
