Trimming is commonplace in cooking. We want to present the tastiest, most beautiful food we can. We cut away the ugliness. These blemishes are usually just as tasty. They just need a different platform to stand upon. When we make stroopwafels, we end up with a good amount of ugly bits. Eating them works for a little while, but we needed to find other uses for these delicious outcasts.
Our first idea was as a topping for ice cream. They add crunch and the maple caramel inside adds a sweet surprise. We thought horizontally and chopped them up, folding the pieces into ice cream. We could do more. We took the chopped up pieces and sprinkled them on top of roasted carrots. These trimmings were tasty. It is finding the right uses for them that can be difficult, and through the search, we discover new ideas.
