We have been wanting to make these crab spheres and a shrimp version for some time. The compressed crab is composed of the smaller pieces from King crab legs. We are working on a new King crab dish and this is the first element which we have fine-tuned. The large section of the crab is in waiting. We have discussed a tempura and other hot preparations, though we have not finalized our thoughts. For now, we have the sphere, a crab crystal ball. Hopefully, it will reveal the rest of the dish soon.
