What I find difficult and inspiring is that we can always do something better. We have been working with egg yolks as a key element for small bites and dishes, and I have questioned how to make the integration and use of the yolks more efficient and visually appealing. We now spread the yolks thin on plastic wrap and use a self-made template for sizing. The plastic wrap works well for easy removal of the yolk disks, but we have a fine non-stick sheet, more delicate than a Silpat, that we will try using soon.
