Here is the recipe for the pea crackers which we used for our rice pudding ice cream sandwiches.
Pea Cracker
100g freeze-dried peas
120g liquid glucose
3g salt
310g water
Cook all the ingredients together until the peas are soft, tender, and hydrated. Cool the mixture in an ice bath, then puree until smooth. Strain the mixture and let it rest for an hour. Use a template to spread the mixture, then dry in a 200-degree oven for thirty-five minutes. Remove from the Silpat and let cool.
