I took the elements of our Curiosity Doughnuts breakfast sandwich and converted it into a meatball. I ground together: pork shoulder, Mortadella, provolone cheese, fresh-ish bread, Calabrian chilis, salt, wine and heavy cream. I shaped the mixture into balls and roasted them in the oven.

They are moist, tender, spicy and rich. They would be great on a sandwich or on top of some breakfast spaghetti. (think cacio e pepe-ish with some cream fried eggs on top)
I wonder if there’s an audience for a dish or two like this?
